The poor Daiquiri. Misaligned with the frozen slushie pouring from drink machines in every bar with a disco floor in the 80s, it earned a reputation as being something college girls would consume in large quantities because it was sweet as candy. Remember that swill, strawberry daiquiris!? I sure was surprised when I went to bartending school and learned that a real daiquiri is a classic cocktail and has nothing to do with strawberries, slushies, or college girls. It's a beautiful drink in its simplicity and balance, no frozen drink machine required.
2 oz. light rum
1 oz. fresh lime juice
1/2 oz. simple syrup
lime wedge for garnish
Shake the rum, lime juice, and simple syrup in a shaker full of ice and strain into a chilled cocktail glass. Garnish with a lime wedge.
